Happenings on the Food Shuttle Farm: June Overview

June was a fantastic month for volunteering and harvesting. We had a total of 536 volunteers join us on the Food Shuttle Farm to help us as the growing season ramped up. Over the month of June, we harvested 6,845 pounds of produce and donated 3,823 pounds of that. Our harvest and donation numbers are only going to increase as we harvest our summer produce, including tomatoes, watermelon, and cantaloupe. We also gained two new staff members, Emma and Lauren! They have been an amazing addition to the team and we couldn’t be happier to have them.

It’s finally my favorite season - watermelon season!  There is no better summer fruit than the oh-so-refreshing watermelon and I can’t wait to share some of my favorite watermelon recipes with you all!

Recipe of the Week: Watermelon Gazpacho

Ingredients:

5 cups cubed watermelon*

1 peeled, seeded, diced cucumber*

¼ cup chopped red onion

½ jalapeño, seeded and minced*

2 tbsp apple cider vinegar

1 tsp sea salt

*purchase the watermelon, cucumber, and jalapeño at the farm stand!

Directions:

  1. Throw the watermelon, cucumber, red onion, and jalapeño into a blender or food processor and blend until smooth.

  2. Stir in apple cider vinegar and sea salt.

  3. Cover and let chill for 30 minutes.

  4. Enjoy!
